Critical violations: Preparation cooler not keeping food at 45 degrees or below in cold holding – raw chicken at 59 degrees in cooler overnight and obviously spoiled (corrected – entire contents of cooler discarded – and cooler taken out of service until it is properly working).
Violations: Spice containers stored in the corner of kitchen stored uncovered, food not protected.
Interior of the ice machine dirty (corrected). Exterior surfaces of cooking equipment dirty with grease build-up and food debris along cookline.
Hand wash sink in the kitchen lacks single service paper towels.
Wall seams have come unsealed in corner of kitchen, allowing for cockroaches to inhabit the area between the wall and the wall board. Also there appears to be a hole around a plumbing fixture in wall behind a double-door freezer, which has created a harborage area for roaches to travel between freezer and wall. (Recently switched pest control companies, there are plans to schedule a treatment.)
Floors and walls throughout the kitchen dirty, including edges behind equipment along cookline, and edges behind the coolers and in walk-in cooler.
